A Treat Fit for a Rich Man

No cinnamon, no sugar, no salt, she reported, and each time, he encouraged her to make the blintzes anyway. Finally, she took them from the oven and placed them in front of her husband who sat eagerly waiting, fork in hand. As he took his first bite, she asked, “Well, my darling, how are they? Do you like them?” Crumbs falling from his lips, he replied, “You know, Sarah, I just don’t understand what rich people see in these things anyway!”
Try this easy recipe, and you will understand what the poor man didn’t…but don’t forget the filling!
A Rich Man’s Blintzes
6 eggs, 6 egg whites 1 tbsp. flour 1/2 cup water 1 tbsp. walnut oil Pinch of salt Cooking spray
Beat eggs and whites together with salt; set aside. Mix flour and water to form a paste and combine with eggs, mixing well. Add oil and beat well. Spray and heat an 8” fry pan and add 1/4 cup batter, turning to coat bottom. Pour off extra batter and continue cooking until crepe is set. Remove from pan, keep warm; respray pan and repeat process.
For filling, combine 6 oz. cream cheese with 1 tbsp honey, a pinch of salt, 1/2 tsp. vanilla, cinnamon to taste, and one beaten egg white, beating until smooth and fluffy. Fold each crepe around a couple of tablespoons of filling; top with a drizzle of honey, a few chopped walnuts, and cinnamon. Makes 8–10.
