Promised Land Apple Cake

This moist and flavorful cake brings a gentle sweetness to the Passover table. The combination of tender apples, almond and coconut creates a rich yet delicate texture, while slivered almonds add a satisfying crunch. True to its name, the Promised Land Apple Cake promises a little slice of indulgence with every bite, perfect on its own or paired with a scoop of ice cream for an elegant finish.
Ingredients
⅓ c. maple syrup
⅓ c. olive oil
4 eggs
2 apples, shredded
3 c. almond flour
1 c. unsweetened shredded coconut
2 Tbsp. potato starch*
¼ c. water
¼ c. slivered almonds
2 Tbsp. powdered sugar
Directions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together the maple syrup, olive oil, water and eggs until well combined.
- Add the shredded apples, almond flour, shredded coconut and potato starch.
- Using a spatula, mix until the batter is smooth and evenly combined.
- Lightly grease a ceramic pie pan with olive oil and pour in the batter.
- Smooth the surface evenly with a spatula and sprinkle the slivered almonds over the top.
- Bake for 30 minutes, or until set and lightly golden.
- Allow the cake to cool before dusting with powdered sugar.
Serves 8–10 people. Enjoy!
Disclaimer: This recipe uses potato starch, which is permitted for Passover. You can substitute with corn starch, but keep in mind that it isn’t considered universally kosher for Passover.
